1) create a note (my case: quarter note)
2) create a grace note (my case: two 16th notes)
3) change a grace note pitch

Not sure what you are doing or what you are expecting, but the way to change pitch of a grace note is with the arrow keys, and this works as expected.

As a new feature though, I could imagine typing a letter name in normal mode replacing the pitch.

Slurs over multiple grace notes require you to select the first and last note (Ctrl+click).
