Is there a way to notate volti subito as "V.S." without having to type it in as a staff text? Also, is it possible to make parentheses around slurs? (Example image attached)

I don't see why adding "V.S." as staff text might be such a problem that an alternative method would be necessary. That is the way to do it. To save a few key strokes if you want to do it frequently you can add "V.S." as staff text once and then ctrl+shit+drag it to a palette of your choice. The you can add it whenevery you feel the need by selecting a note or rest and clicking on your customised palette item. Adding brackets to slurs can be done with stave text, but it involves much fiddling with placement. The ability to add editorial brackets has been suggested before; see https://musescore.org/en/node/86246 for example and also in the issue tracker here #300462: Add square brackets to score elements to indicate editorial additions/changes.
