Not possible if you're after the playback.
Graphically use a crescendo line and change the text

I am not after playback, just the graphics. How do you make the crescendo line system text?

You can't. You can set its range to system though. Not sure whether this makes it part of all parts then.
If not, (miss)use a volta for this.
Change it to loose the hooks, be dotted and have rit. as the text.

I tried setting the range to system, but it did not output to every generated part. The volta idea works well. Another poor option is to just use system text and add some extra dashes. Thanks for the help Jojo.

That hairpins and dynamic don't apply to all parts if range is setting system is a known bug it seems, see #95416: Dynamics not saved for staff other than top if system flag set

I can't figure out how to change the text of a text line.
I want to turn a "cresc." into a "rit." but keep the dotted line. I've tried:
- insert cresc-line from palette.
- double click it, like I would a regular text box.
- right click - "edit element" throws me to the selecty-movy-boxes at the end, but not to the text
Can this even be done?

Use the Inspector to change the text(s)
But better use a system text line and change that to your needes (like change text to "rit." and line to dotted)
As a system text line it should propagate to all parts rather than apply to a single staff/part only
Once done, add it to your lines palette to have it ready for ther next use
