Divisi
I would like a feature where I can add divisi so anyone playing my piece knows " Hey, I can't play this chord by myself on the violin right at this measure."

Add both staves, enter the notes, hide empty staves
If the rhythms are identical and the second part stays lower than the first part, write everything as a chord and write divisi above the staff. If the rhythms vary but part 2 stays below part 1 use voices. If the two parts are nothing alike and cross notes, then use two staves as Jojo suggested. I've seen all three methods in one song on many occasions.
