- Add a chord symbol:
1.1 Select a note or rest within an existing stave and press CTRL+K.
1.2 Type a chord symbol (i.e. Am7) and press ENTER - The first character disappears (i.e Am7 becomes m7)

You need to attach the score. There's something strange going on and I can't duplicate this.
This can happen if you have an improperly built/installed version of MuseScore, in which the chord description files are missing. If this is a version you built yourself, you must not skip the install step, and you need to run the installed copy, not the copy in your build folder.
If this is with an officially released version of MuseScore, please tell us which version and what OS.

musescore 3.5.2.31149983 fresh install on a win7 64bit laptop
I see the A, and also if I add another Am7 the A doesn't vanish

Try reverting to factory settings (under the Help menu)

Problem solved after 3rd fresh re-installation and system reboots
