Using macOS 11.0 Big Sur and the Testing version of 3.6.
1) I change audio output on my computer from e.g. built-in output to my Bluetooth headphones.
2) Musescore either continues to use the original output (e.g. play through my computer speakers while everything else is playing through my headphones).
To fix this, I have to quit and start Musescore again to 'reset' the audio output. No other program needs this.

not related to 3.6 at all, nor to Big Sur (but possibly to Mac), more a general problem with bluetooth. Comes up time and time again, so this here most probably is a duplicate, but I'm too lazy to search ;-)

I've also seen this before, and not necessarily with bluetooth and definitely not with 3.6. I also have a Mac, it may be mac-specific. I have also seen it when plugging in headphones. I have to use the option to restart the audio in order to get MuseScore to produce sound through the headphones.
I do have Big Sur. I think I also saw this in Catalina though.
I use: OS: macOS 10.16, Arch.: x86_64, MuseScore version (64-bit): 3.5.2.312126096, revision: 465e7b6
There are at least dozen open issues reporting similar things, so I'm closing this as a duplicate of any one of them. Unfortunately this does seem quite system-dependent, all works fine on my system, But I would agree more Mac users seem affected than people on other OS's.
