There's quite a lot of features greyed out and unusable e.g. Text style.

Yep! New user! I was trying to change the font from Roman Text as I don't like serifs but under the "Format" button everything is greyed out except for "Stretch". If the feature is there, why can't I use it? I tried highlighting the text I made in the Title section but that didn't do anything and I couldn't find anything in "Help" that could assist me as it just brought me here.

To change the font for a single text element change the font inside the inspector or the text tool box .
To change the font for all text elements use format->style...->score (https://musescore.org/en/handbook/3/layout-and-formatting#style-score). In the latter case be sure that you're not in the text edit mode, press "esc" to leave it (https://musescore.org/en/handbook/3/text-editing#text-edit-mode).
What exact version of MuseScore? Can you share the score?
Those menu entries under Format should not be disabled, as soon as a score is loaded

Enter the text edit mode for example for the title, open menu format:

Leave text edit mode then, as simple as hitting Esc...
Changing text properties during text entry is to be done in the text toolbar at the bottom.

highlight is not the same as edit mode, single-click vs. double-click
