Adjusting dynamic + hairpin
On the Palette, there's a "Dynamic plus hairpin" that consists of mf followed by a crescendo hairpin. How do you adjust a) the dynamic, to a different one like p or ff, b) the hairpin to a diminuendo, and c) reverse the positions of the dynamic and the hairpin?

FWIW, though: these are very specialized things, meant for a very particular use case where you need the dynamic attached directly to the hairpin and not - as is normally the case - to a note. In those cases, this symbol does "work", but will require considerable extra fiddling to get the layout or playback close to what might normally be expected. In most cases, you don't mess with that, just add the hairpin as a hairpin, add the dynamic as a dynamic, and everything then just works, no fiddling required.
