MuseScore doens't have a full organ simulator built in, you can just select from standard General MIDI sounds, using View Mixer (or adding staff text to change sounds mid score using Staff Text Properties, as described in the Handbook sections on changing sounds).
If you want a full organ simulator, you'd need to investigate third party programs and set up MuseScore to communicate with them via MIDI output and/or JACK.
