white dynamics & 1 hand piano dynamics

Hi there! i have an arrangement due in 1 hour and i need to know how to make some dynamics (but not others) white? its so i can do "sim." but also having the midi have the dynamics still. also, is there a way to have one hand play piano or something and the other play fortissimo.
