My first score is a solo voice with Piano Accompaniment
I want to change the accompaniment from piano to Harp. When I bring up instruments, the only option is to add the Harp not replace it with the Harp sound. That impossible isn't it?

If I understand correctly, you wrote piano, not you want to change to harp. Don't just change playback sound (although that's certainly possible using View / Mixer) - instead actually change the instrument, by right-clicking the staff, Staff/Part Properties, Change Instrument. This changes not just the sound but also staff name, clefs, transposition, range, etc.
Try using the Mixer instead. View/Mixer
