add note from bass in teble clef
In the attached in bar for old man the bass piano part needs to play an E in the treble clef at the places marked with 1/8 rest. How do I do this?

The approaches shown above work for sure. But I'd also note, as a pianist, I don't think either of them are preferable to simply putting the E in the bottom staff. Two ledger lines is not too many, and keeping it one staff helps the eye/brain conceptualize the intervals better.

It's a very subjective determination, and sometimes there might be other considerations like making room for dynamics or other markings. So I wouldn't take my comments here as authoritative - just a personal observation.

So, on the piano, what finger on which hand would you use to play that 'E'?

Probably I'd be using my left thumb, at least in the first measure I saw this. Depends on what is coming before/after and what else is going on in the other hand. There are some anomalies in this arrangement that make this awkward, like in bar 4 where the accompaniment arpeggio doubles a melody note, and in bar 6 where it actually goes above the melody.
