Instrument names when exporting are inconsistent with chosen instrument names
In the screenshots attached, you can see that I have given custom names to my instruments.
But when publishing / exporting the score to PDF, the checkboxes to publish individual scores for each instrument still use the "default" (I guess) names.
The produced PDFs also use these "default" names instead of the names I chose. I have included an example score for the instrument I named "Aigu".

The names you changed are the staff names, not the part names. To change those, use the Parts window.

thanks. I'm trying to translate between your advice and my UI which is in French, but attached is a screenshot of what I believe is the Parts window, and the name is correct there.

That is Staff/Part properties. The Parts window is the one you presumably used to generate the separate parts from the instruments in your score - the button next to the the Mixer button on the main toolbar.
