Inserting text in score
To insert the words "Manual - Pedal" (and in the same position as the sheet music in the example), what kind of text should I use?

I'm doing it this way: i rightclick on the first staff, choose "Instrument properties" and in the "Long instrument name" i insert several line breaks (return) first and insert "MANUAL" as well.
Same for the pedal staff, except of the line breaks.
