Using a beam?
I have an 1/8th note, 1/16th rest and a 1/16th note. Right now the 2 notes have their own stems; is there a way to have them connected with a 'beam' (is that the correct term?)?

Yes indeed. Select the 16th rest, open the Beam Properties palette, and double-click "Beam middle" (the second option in the palette).
