General Midi not complete
I used to have a hardware keyboard that used General Midi and I also have a Demo copy of FLstudio that enables use of the computer's General midi sounds but in Musescore, there are plenty of missing sounds including "strings" and some of the more synthetic sounds. Is the soundfont incomplete or have I been working with extras before?

As a category yes but not as an instrument. I would like to be able to use the sound of a whole string section of an orchestra.

As instrument and sound, just look again and closer. Or aren't you using the latest version?

When I am offered a choice of instruments, I open the "strings" section and the only choice it gives me is Violin, viola, violoncello, contrabass or double bass. The sound I am after is simply called "strings" and sounds like a whole string section. I am using the latest version of Musescore.

there are the choices when looking for 'common instruments' just look for all, or just type violins in the search box
If you want it called 'strings', rename it in the score.
Violins, Violas, etc, (the plural forms) use the 'strings' sound from the sounfont
