Select the bar or group of notes. From the palette, select beam properties and choose (in this case) the second option

It seems easier to change Note groups of Time Signature Properties?

Maybe. If you want to deviate from common notation principles (and for the entire score, not just the the odd measure here and there), or are using an unusual time signature MuseScore doesn't know the 'beaming rules' for.
There are also situations with vocal staves that may require manual intervention, like make the beams match the syllables/melismas. And there's a plugin for this, see https://musescore.org/en/project/traditional-vocal-beaming
