New Page for a Score
Ok, I admit a 'duh' moment here. I finished composing one page of my first score. I can't find how to add a new page, which would be page 2 of my score.

Append measures to the score (Add->Measures->Append...) and put a page break on the last measure of page 1.

Got it, thanks. The "final barline" at the end of my previous last measure was moved to the end of my new measure. I presume "final barline" means end of score?

No, it means "final barline", a thin and a thick line. Could be mid-score, like at a Fine, following a D.* al Fine.
But usually yes, the final barline is the last barline of a score (or section)

Use a text frame. Or staff text, moved to below staff.

A text frame that sits under the bar on the staff.

Use staff text, changed to below and changed to have a frame. Both via inspector
Or use a rehearsal mark, change to below. Via Inspector or X

In order to give you the best advice, we'd really need to know more, the actual purpose of the text, how long it is, etc. There is staff text, there is expression text, system text, Roman numeral analysis, text frames, vertical frames, and other possibilities, any of which could be the best choice depending on your specific example.
