Midi conversion?
Musescore claims that it can convert midi files to sheet music... but when you open it in the program, it's basically a mess. I'm not well-versed, so I don't really know how to fix it... but the staff changes are bizarre and there seems to be no rhyme or reason as to which staff it goes on. Clef changes can be removed but it keeps the note on the wrong staff anyway and would be really difficult to actually play. Anybody have experience with this? I only have ONE song I want to get the sheet music for and then I'll likely never use this again lol. But if anybody can help, I'd appreciate!

It definitely does import that MIDI file and shows you a resulting score for it given the default import settings. It can be improved a bit by adjusting those, see attached; but that still leaves it quite a bit away from a functional score.
There are two main reasons for that on brief inspection of the MIDI file:
(1) It seems to contain two instruments (guitar and piano), but all combined within the same channel/track, so there is no way for MuseScore to differentiate them
(2) It seems to be a recording from live playback, as it is not at all quantized. Meaning that there are a lot of notes in there that are shorter than their notation should be, or start just a fraction sooner or later than what you would normally notate on a score. And because the note releases are imperfect too, this leads to a lot of "overlapping" constructs, which MuseScore quite faithfully reproduces by using tied chords or multiple voice in order to handle them.
My advise would be to start a new score and open that import (or as attached) side-by-side. Use the import result as a guideline when writing down the actual score, it'll likely be a lot easier than try to fix this mess.
Of course, the result will improve a lot if you first can fix the timing within the MIDI file itself.

I appreciate your advice! I'm working it out from scratch now :) It's definitely better than trying to fix what was there.
