Chord symbol repeat
How is it possible to enter a repeat sign for a chord symbol instead of having to write out the chord in full for each bar it is repeated?

Simple: it is not.
You could use a simple % as a workaround, or the repeat measure sing from the F2 special characters palette, but don't expect them to play back too
See #84066: Allow % as chord symbol and #127376: Simile Mark as Chord Symbol (for either 1-measure, 2-measures, or 4-measures)
But to be clear: easiest - and most standard - is to simply write nothing in the bars where the previous chord is repeated. That's pretty much universally used and understood - a measure with no chord symbol simply carries over the previous chord.
You can if you wish use and of the methods describe to add extra symbols to score if you feel inclined, but it's not needed or useful to most musicians
Now, if you mean, you want to hear the MuseScore playback repeat the chord, then you do need to add it, then make it invisible.

That doesn't work with, for example, Am7 D7, Am7 D7..... each pair within the same bar.

Well #84066: Allow % as chord symbol doesn't, but #127376: Simile Mark as Chord Symbol (for either 1-measure, 2-measures, or 4-measures) does
