Alternate notes for different verses
In songs, the verses don't always have the same number of syllables, so there are slightly different notes sung in a few places. In printed music I have seen, the notes for verse 1 are the same size as all other notes, but the alternate notes in verse 2 are engraved as small notes.
Is this possible in MuseScore, and if so, how?

Yes and exactly as you described: use voice 2 and make the notes small

I am unaware of how to make the notes small.
When I try adding notes using voice 2, MS adds rests for voices 1 and 2. Can those rests be make invisible somehow? It really complicates the look of the measure.

Select the notes and in the properties panel select "Cue size". See https://musescore.org/en/handbook/4/properties-panel#object-prop
Select the rests and use keyboard shortcut V. See https://musescore.org/en/handbook/4/default-keyboard-shortcuts#score-se…
Or deselect "Visible" in the properties panel.

Thank you very much for that! I didn't see it in the handbook entry, but I assume that cues are not sounded during playback. Is that correct?

You can disable their sound
