Better just mute them
Another way would be to (temporarily) re-arrange the order of the staves so that 1st violin and cello are adjacent. (Yes, that's out of the normal order. That's why it's "temporary".) Then simply select a measure in one and extend the selection to the other, so that a measure in 1st v and c are both selected. Hit Play. Only the two selected staves will play.
