Selecting a note
I want to move a note horizontally. When I click on the note to select it, only a part of the note becomes highlighted, e.g., the stem. I am doing this while not being in the "note input mode". How can I select the entire note?

Click on note head, then use inspector. In the chord section, change horizontal offset

This is what I have been trying to do; however, when I click on the note head, only the note head becomes highlighted (selected), and only the note head moves when changing the horizontal offset. Likewise for the stem if I click on the stem.

True, the Element fields are for movingthe components of a note separately. To move them together, use the Chord sectin. But see below - this is not what you want to do just to save space. It won't work well, and will take 100 times longer than the better ways :-)
Before doing this, though, you might want to clarify why you are trying to move the note. MuseScore uses standard engraving practices in most cases and it shouldn't be necessary to make adjustments often. Sometimes people try to move notes manually to solve some other problem that actually has a much better solution. In order for us to assist better, it would help if you attached your score and described what you are trying to do in more detail.

I move the notes so that, in some instances, I can fit the entire score on one side of the paper.

Definitely much better ways of doing that! For instance, Ctrl+a to select all, then press "{" as needed to decrease stretch. And/or change the overall scaling of the music in Layout / Page Settings..
