accents

How can I accent individual notes? I've tried using CTRL-V. The notation appears correctly, however when I play the piece the volume of all the notes is identical. It appears that the ">" notation is nothing more than text on the page.

It's definitely louder, maybe just not as much louder as you'd like?

Anyhow, keep in mind, MuseScore is a notation program first and foremost. Saying the notation is "nothing more than text on the page" is like saying an airplane is "nothing more than a big flying machine" - that is indeed the point :-)

Did cadiz1 not help you? Didn't Marc give you information you did not previously know?

In the inner workings of the score there is a line that says a > on a note is played at 120% of the volume of a note without it. Some ears can hear this difference and some cannot. To quieter the note, the more difficult it is to hear this difference. As Cadiz1 said, if you want more difference, then use the inspector (toggle it by pressing F8) and change the velocity (which is like the volume) on the note.
