The translation is still in progress. For German I think 88 strings are still needed. However, try to update from the 'Help' menu. If you don't have a better answer here we can post the question in the forum https://musescore.org/en/forum/9

This missing 88 are all for symbols. And I'm not sure whether to translate them at all

You can certainly check the context of transifex. I believe it says sym.cpp

Never explored (reverential fear) but I discover that they are visible. I had probably used the wrong path.

I don't see this particular issue on Windows in the latest Beta. But as part of #280162: Improve language and formatting of Style Tuplets dialog I've also changed this so it is now 5 lines below one another, which should avoid the coslision

I've marked the appearances in the menu: texts cut for no(?) reason (red), texts cut because of no space, german text too long (pink)

No, they don't. Only the left portion of the window gets bigger.

It's really strange the different appearance with different Linux distributions. I suppose you're using unity? Is there difference if you switch to another window manager/desktop environment? With OpenSuse and XFCE no text is cut off with the actual development build.

For desktop environments of Linux Mint see: https://de.wikipedia.org/wiki/Linux_Mint#Desktop-Umgebungen.
I don't know if there are installed several desktop environments by default. But sometimes I noticed there's a different appearance between several desktop environments. Maybe try to log out the user and log in again with another available desktop environment.

I found that my environment is "Cinnamon". I logged out and in but there is no other environment available.

Beside "XFCE" I've installed "Cinnamon" too. But also there is no cutted text with OpenSuse and an actual nightly reproducible. So the reason of this appearance seems to be another and not the used desktop environment.

OK, i installed XFCE, logged out and in with XFCE, same error. :-(

And with 2.3.2 it looks different? Is there a former nightly of MuseScore 3.0 available where it's displayed correctly?

Yes, in 2.3.2 all is right.
I didn't test all nightlys, only the ones I have indicated above.
