How do you change 8th note 7/8 timing structure?
How do you change the 8th note 7/8 default timing structure from 123 12 12? What if I want 12 12 123? Every time I fill it in, it defaults to 123 12 12.

Thank you for the quick response.
Can I have them be different for different measures? I.E. 123 12 12. 12 12 123. 12 123 12...etc. I will select different measures and change the structure but it changes it for the entire piece.

No, not automatically, there's just one setup per time signature. But you can change the beaming manually, see https://musescore.org/en/handbook/3/beams
