Don't quite know
Sometimes when I download pieces of music from the website to the app on my laptop, there are separate pages for each instrument as well as the full score (screenshot attached in a word document).
I am arranging a bit of music for a school project for next year, and I'm trying to create the extra pages, but I don't know how. Can someone tell me how to do this?

File > Parts
Those separate pages are called parts and are generated by going to the parts tab under the "File" ribbon on the top left of the window. What exactly do you mean by creating extra pages? Are you trying to add to the score or is there something in particular you want to achieve?

Well, the image in the doc the OP attached shows otherwise (than being about PDF plus parts from the musescore.com website), this is the MuseScore program window, a score with parts:
