Deleting or adding a staff
For a voice with piano accompaniment, is it possible to start with two staves for the piano introduction then, when appropriate, start a new line using three staves?

Yes, add all instruments you ever need, enter the notes, then use "Hhide empty staves" and uncheck "Don't hide empty staves in first System". See https://musescore.org/en/handbook/layout-and-formatting#style-edit-gene…
