If you right click and chose staff properties, you should see an option to change instruments. Change it to baritone and all should be good. If the key is just wrong, select the entire staff and press the down arrow twice and you will change from C to B-flat.
update: if you want to change from euphonium to trumpet you will probably have to press ctrl + up arrow (maybe more than once) to change the octave if you are changing from from baritone to trumpet.
BTW, if you haven/t gotten too far along yet, you can also simply add the treble clef (Bb) version of euphonium in the first place, rather than first adding the concert version then changing it. It's not listed under "common instruments" but shows up if you use the search box, or switch to "all instruments" using the dropdown menu at the top of the instruments window.
