Loading instruments
I started with a piano template and find that I cannot allocate a separate instrument to each stave. Whether I try by right clicking on an empty part of, say, the base or using Create/Instruments (for which the Help does not work and the instruction book seems to say nothing. I am missing something?

If you want separate instruments, then use separate instruments. So instead of starting with the piano template, start from scratch and select the instruments yourself.

Attached are two files:
The first is for piano, having treble & bass clefs (grand staff).
The second is for two instruments, with separate staves.
For each file:
Have a look at menu item: Create / Instruments... and compare the differences.
Also menu item: Display / Mixer where you can change the instrument sounds.
And Display / Play Panel for tempo and overall volume adjustments.
By the way, feel free to experiment on these files by deleting/adding any notes/measures/instruments, etc...
If they get all messed up, you can always come back here to start again.
