how do you select multiple notes to be able to change them to a different color?? I know you can do it with Inspector one note at a time.

Easiest method is usually to select the whole range then press the Notes button in Inspector to limit to just the notes. If they aren't contiguous, though, then Ctrl+click would be the best way.
