Edit Beams in the Inspector
I try to adjust beams with the Inspector but there is no section "Beam" in the Inspector. When I select a beam it says "Element" in the Inspector and there is e.g. no "Auto" mode.

Beaming is a property of the chord (or rest), so if it should be shown in Inspector then under the Chord heading. The beams properties itself are where they belong, under element, and only are about color, x and y offset
You don't say what specifically you want to adjust. You can break and join beams via the palette as mentioned, or change the defaults i the time signature properties. Height/angle are adjusted same as for most other elements - by double-clicking to enter Edit mode then moving the handles. There are additional adjustments possible in the Inspector if you click the beam itself, plus various defaults that can be set in Style / General / Beams.
