In my experience Musescore is insensitive to audio changes on my system. When I connect my headphones, I have to restart Musescore to get it to play through them. When I disconnect my headphones, I have to restart it to play through my system speakers. Maybe that's what you're running into?
I have the same issue. I'm on Mac OS Mojave (10.14) and charts won't play through the audio jack in MuseScore 3.0, but they will in 2.3. I've restarted, manually fiddled with audio controls, etc. Nothing.
same here. closing out and coming back in doesn't work either.
Also: i use Windows and I'm fully updated. Bluetooth audio works fine, it just seems to be the audio jack
Click "Restart Audio and MIDI devices" in the "I/O" tab of the "Preferences" tab dialog every time you plug or unplug headphones. Works every time. No, you shouldn't need to do this.
THAT WORKED!!! Gosh, I've been fussing all darn day. Zapped PRAM, restarted, reinstalled, and the solution was Preferences>I/O>Device:Built-In Output and all my playback and Akai LPK25 controller came back to functionality!!!
Audio (midi) does not play after unplug/plug phone jack.

Everytime I unplug an audio jack, usually my headphones, Musescore no longer plays. They play button looks pressed and editing buttons are disabled as expected, but no sound, no movement. Other apps and system sounds still play, I don't have other apps that play midi so can't check that.
Quitting and restarting Musescore, after rearranging my audio jacks, fixes the not playing issue.
There is usually a short buzz sound when first playing something, after restart, which delays the playing for a split second.
Musescore 3.0.5 on Windows 10(64) with Lenovo USB Audio
This is a recent issue on the Mac; I hadn't heard of it before on Windows, but try the same workaround: open Preferences > I/O and click "reset audio/midi". Too bad it's not fixed in 3.1.

Same problem here, when i switch to headphones or speakers, no sound, no playbar running...
Did you try restarting? Or going to Edit / Preferences / I/O and selecting your device?
Plays through headphones fine on my windows computer as well as linux computer. Don't know what OS you are on.

Me too. Playing back fine in 2.0 but not 3.0. I've checked edit/preferences/io and that hasn't solved the problem.

Or under MuseScore on Mac.
Try sound mappping as captured:
