What I'd really like is to be able to set the score as unmetered to begin with.
Only thing you can do for this is to hide the time signature, see https://musescore.org/en/node/24449
It is a bit outdated, but MuseScore 3 is not that different from 2 in that regard

Yes, with some effort, like merging measures, hiding time signature
...or using the "insert input mode" (https://musescore.org/en/handbook/3/note-input-modes#timewise)

Awkward, but it works. Should be able to create an unmetered score from the get-go.
