Multimeasure rests

If every instrument in the part has rests, then pressing M will turn measure rests into parts. If you are trying to put multi-measure rests into the main score, wait until the notes are entered then press M. M will also change multi-measure rests back to measure rests. Realize that pressing M will turn ALL measure rests into multi-measure rests, so you'll want to enter all of the notes first.
But also, normally you don't need to do anything at all. Multimeasure rests are virtually never used in a full score (it would only be relevant if all instruments rest at once, and how many scores have all instruments rest for multiple measures)? It's normally needed only for parts, and MuseScore does this automatically when you create your parts from the score. The only time you'd ever need to turn them on manually is if you are entering the music for a single part without the rest of the score.

The use case for this is quite common. People get the part for their instrument and create a score for their instrument. It may be so they can have a different sized print out or be able to hear the computer play the rhythms. By default, multi measure rests are turned off on the score so users such as this want to turn on the multi measure rests after the score has been entered since there is no reason to generate parts from a score with only one part.

True. But it's also common for people to "put the cart before the horse" and start worrying about rests when they don't need to and wonder why it doesn't seem to be working. Or, worse, not realize there is such a thing as a score and parts, and try entering a bunch of parts individually rather than as a score. So I do like to point this out.

Yeah, the longest grand pause(no instruments playing) that I have seen is 3 measures and that is in a Haydn string quartet piece. In works at the level of Beethoven's Fifth, longest I have seen a grand pause is a single measure(including in Beethoven's Fifth itself). And in piano music, I virtually never see a grand pause. I might see rests in both hands, but very rarely is there a 1 measure rest in 1 hand that doesn't have notes being played by the other hand in a piano piece.
