Instrument change text gets overriden by instrument name
For example, I add a "change instrument" text: "Cymbals". Once I select "Drumset", the text changes to "To Drumset". Is that supposed to happen? I only report this because after many instrument changes it becomes a load of extra work.
Also, I noticed that the option of adding a box around the instrument change text is no longer in the inspector palette. Is it there anywhere else, or am I looking for it in the wrong place?

Also how can I change the name of the "instrument change" on the abbreviation text on the side of the stave?

Unless I'm missing something, that's not the name of the "change", that's the name of the instrument itself. You edit the names of instruments in Staff/Part Properties.
Hard to tell based on just the pictures, but I get the sense you might be trying to do things in ways other than how they are intended to work (eg, there should be no need for an instrument change between drumset and cymbal normally). So maybe it would help to attach your actual score so we can understand and assist better.
Yes, it's supposed to happen, because that's the most common notation to tell a player to change instruments. But it's not universal, if you'd rather see it say something else, you can indeed edit the text.
