Not with a regular grand staff, but you can fake a grand staff by having 2 pianos, one with only treble clef and another with only bass clef. Then you can 'solo' one of them in mixer.

I already have a grand staff score. What would be the easiest way to convert it to two pianos?

Add another instrument, cut and paste the contents of the original staff to the new one.

Just keep in mind, the primary purpose of MuseScore is notation, not playback. So it is optimized for entering and editing in ways that one would need for producing a printed score, not for the ways that might help get the utmost in control over playback.

Yes, I agree. It would be nice to have the mixer handle the grand staff as two separate instruments, but of course it's not essential. MuseScore is a wonderful program and I look forward to version 2.0 coming out of beta.
