Just create a score with similar instruments, then modify their name and tweak the ranges. Store it as a template, if you need it more than one. I think https://musescore.org/en/node/15803 is for MuseScore 1.X and would need some adjustments for 2.0
But FWIW, the process in the aofrementioned page appliues to Mac as well as to other systems. it might be out of date, though. The same basic process is still true, but if you notice details changed in the file itself, just go with what you see. Do be sure to follow the instruction to tell MuseScore to use your customized instruments.xml file via Edit / Preferences / Score.

It is bundled into the app, so right click on MuseScore.app and choose "Show package contents"

Any plain text editor should do
