Can't change second staff to Music Box!
Tried via Staff Properties > change instrument, but can't see Music Box.
IF I go into mixer, it won't allow me to select the second staff, help!

"Music Box" is not an istrument (well, at none that MuseScore knows about).
"Music Box" is a sound though, available in the Mixer. Chances are you're in a Piano instrument, having 2 staves, there indeed you can't change the sound of the staves independently of one another.

Press i, add (one or two) Instruments, eg Chimes (or add one and a second staff);
Copy and Paste, via Mixer set sound to Music box;
Delete unwanted Instruments.

Didn't work, unfortunately...
The mixer says Music Box but only the top bar is playing music box, the rest doesn't want to change :(

You indeed have two instruments there and only changed the sound for the first one.
Click on the 2nd track in the bottom area to be able to change it's sound in the top section as well.

Just a start-up aid ;-)
As said above, I added the Chimes, copied and pasted, deleted the original instruments and used the mixer.

Apparently you do have 3 instruments with one staff each. So you should be able to change any of them individually

Select the instrument in the Mixer - that's the sound you wish to change to music box.
