In version 3, right click the staff, choose staff/part properties click Advanced staff properties and choose your Notehead Scheme.
In version 2 there was a notehead plugin https://musescore.org/en/project/add-note-name-noteheads

I have done this (Advanced Staff properties), and what I get is the tonic solfa name printed inside the note, so it very hard to read. Is this the only option for producing tonic solfa?
Also, can I tell it that the music is in D minor, not F major?

For your second question, you could just use staff text to indicate D minor, but it should be obvious when you sing it. I was brought up on solfa and minor keys started on La - there may be other conventions, I suppose.
