I am just starting to use MuseScore and have a question. I have a piece in 5/8 and grouped as a 3 + 2. When I change the time signature it automatically groups at 2 + 3. How do I change that?

Open the time signature properties. There you can change the note groups.
See the attached image from MuS 3 (example to show some possibilities).
Click on a note and the beam to the previous note will be toggled.
If you need this later too, you can create a new 5/8 time signature with a different grouping.

When I go to "view", then "properties" I don't see the time signature option. I am on Mus 4, does that make a difference?

I cannot use MuS4.
In MuS3 I have to select the time signature to access its properties.
I don't think this is any different in MuS4.

When I start a new file. I select the template. I click on the 4/4 time signature in the new template, then I go to "view", select "master palette", then "time signatures", then the 5/8 signature. It automatically makes it a 3 + 2 signature and I want a 2 + 3 signature. I don't see a way to change it.

Why the master palette rather than the Tim dig palette?
Anyway, right clixk the time sig, properties, and in that dialog change the beaming

This? I don't see a way to change the beams. I tried using the beam selector, but I could not make it a 2 + 3.

Row 1/8:
Click on the third note - you will get 2 - 1 - 2.
Then click on the fourth note - you will get 2 - 3.
And, in the palette you can create a second 5/8 time signatur with 2 - 3.

What did you attempt? As you can clearly see in the dialog there are buttons called "Beam selector". Are you saying you tried to select the notes in the dialog, and pressed the "Beam Selector" buttons and nothing happened? Did you read the handbook chapter describing this dialog? What part was not clear?
