Uninstalling a program never deletes the documents created with it (well, not on Windows or Mac OS or Linux; I guess this is common enough for iOS or Android apps).
So yes you can uninstall MuseScore 1. Although, you will find the many major improvements in the layout mde for MuseScore 2 sometimes mean some manual adjustments you made in MuseScore 1 will no longer look right, meaning it might take some effort to re-adjust a score a score to look like it did before. For that reaosn people often keep MuseScore 1 around a while during the transition.
Except for saving disk space I don't see a reason to uninstall MuseScore 1, I'd just keep it, just in case you need it.
