that 'v'? It enables different types of note input, see https://musescore.org/en/handbook/note-input#input-modes
If you mean the item that looks like a v, it makes a drop down menu when pressed that allows you to change the note input method.
As you can see in the mixer and elsewhere: it shows a drop-down menu when you click on it.
