Splitting measures and doubling time value
I started out transcribing a song in 4/4 80 bpm, but I later found out that it would be better to have it in 4/4 160 bpm. Can this be (easily) done in Musescore?

Edit the tempo text to say 160 instead of 80. Unless one of those time signatures was a typo?

Just changing the tempo is easy, but I also have to double the note values (32nds to 16ths, 16ths to 8ths etc.) and double up on measures. The 3/4 time signature change is not a typo. I just haven't transcribed that part, yet.

There's a plugin, https://musescore.org/en/project/doubletimev20, for this. But be aware of #90721: Doubletime plugin crashes with Musescore 2.x

Yes, I tried this plugin before posting my comment, but I'm running Musescore 2.0.2 and, as expected, the program crashes each time the plugin is initiated.

half and doubletime always crash :/

doubletime 2.0.1 always crashes for me too :-( I don't have much of a clue about musescore, but I am a developer so could help debug this if given some pointers.
